White Chicken Chili
Friend, I promised you some easy recipes and let me tell you, this is a family favorite!
We already finished out our taco soup phase. Which is crazy easy too. But for the Bells, we want SOUP when it is freezing outside. I realize saying that about Alabama seems crazy, but it can get cold in the winter and this recipe offsets the seasonal depression a bit!
Here you go:
1 medium onion chopped.
1 heaping spoonful of minced garlic
1 can of corn (we prefer white shoe peg but have done both and its delish!)
1 can of navy or northern beans
2 cans of mild green chilies
1 tsp of cumin
1 tsp of oregano
1-2 TBSP of chili powder
1 tbsp of garlic powder
1 tbsp of salt
1 small chicken
16 ounces of chicken broth
4 ounces of cream cheese
chopped cilantro (handful)
Directions:
Add all ingredients except for chicken into crock pot and cook on low for 4 hours.
Cook your chicken separate. I use whole chickens because we raise our own. Simply boil it down to cooked and pull it apart. Easy peasy!
You can add more broth to your soup depending on your liking for soupy-ness. We like ours HEARTY with less broth. Choice is yours.
Once chicken is cooked, shred it and add to your soup. Let it simmer another 15 minutes.
Serve! you can garnish with avocado and lime— DELISH!
We serve ours over baked potatoes or white rice and its SO GOOD!
